Using a scale helps a lot. You can still be wrong about how much you want to eat, but at least you’re not limited by your ability to judge the amount by sight anymore.
2 oz per person is what I go by. I usually want more, but it’s a healthy amount.

Do people not make multiple meals when making pasta? It seems pointless to not cook in batches, but I also don’t have the time/energy to cook everyday.
Portion control is much harder for me when there are leftovers. Way too easy to overeat.
If you’re planning for leftovers, it’s even better if you plan them in such a way that you don’t run out of one part of the meal, e.g. the sauce, while you still have a mountain of e.g. noodles. Also, reheated noodles kind of suck.

Make a tiny bit more than you think everyone wants, then save the rest for leftovers? I don’t get the issue with pasta (or rice).
You still need to know the right amount for that, otherwise you can easily end up with too little or way too much.
I have no issue. I know how much pasta my family eats by what it looks like inside of my thumb and index finger when they form a loop. 🤷♂️ After a few times you get the hang of it. All you need to do is pay attention to how much you took and how much it is once boiled. 👍 Everyone can do this. Then if course people will eat different amounts depending on hunger and such, but that’s what leftovers are for, is what I meant. 😊
I take it you never serve fusilli or other shapes that aren’t long and straight?
The right amount is however much you want to eat 🙂.
