I’ve been out of work since last year, and I need to create a company so I can list on my resume, just so I can show recruiters I’ve done things.

    what things have you done that you want to show recruiters?

    if you’re in the US you can register with the IRS as a sole proprietorship, and put your activities on your resume as “self employed”.
